We had so many amazing cocktails in Barbados, and yes, they all contained rum. Rum Punch, it seemed, was the one rum drink that had many interpretations. It could be a sweet, beachside cocktail you only wanted one of, or it could be a deliciously balanced one you wanted to drink all day (also on the beach). Our favorite was at a newly opened venue called La Cabane, which we were introduced to by our friend Jamaal. We spoke to the owner about his version, and he told us it was all in the amount of nutmeg used. Too little, and the sugar wins; too much, and you potentially ruin everything. We modified ours with the addition of coconut syrup. And to balance the flavor, we added some of the bitters into the punch itself and kept half of them to use as a float, for effect (see note on page 128).
2 ounces moderately aged rum
1 ounce lime juice
1 ounce coconut syrup
6 dashes Angostura bitters (divided)
1 pinch grated nutmeg, plus more to garnish
Lime twist to garnish
1. Add the rum, juice, syrup, 3 dashes bitters, and 1 pinch nutmeg to a cocktail shaker with ice.
2. Shake for approximately 30 seconds to chill and combine the ingredients.
3. Strain into a pearl diver glass.
4. Fill the glass with crushed ice.
5. Float the remaining 3 dashes of bitters over the top (see note on page 128).
6. Grate nutmeg over the top.
7. Garnish with a lime twist.
